What’s more, if you’re on a gluten-free diet, Oreos are out of the question. But there’s good news – you can make vegan, gluten-free Oreos at home. Here’s how to whip up a healthier version of the classic cookie.

Pro-tip: Using seeds from a vanilla pod adds an extra touch of luxury to these easy to make cookies.

Ingredients

For the cookies

  • 1 cup flour of your choosing (regular or oat, almond meal, if you’re gluten-free)
  • ½ cup cocoa powder
  • 1/3 tsp baking soda
  • ½ cup coconut sugar
  • ½ cup coconut oil, softened
  • pinch of salt

For the filling

  • ¼ cup non-dairy butter, room temperature
  • 1 cup powdered sugar
  • 1 vanilla pod, seeds scraped

Directions

  1. Preheat oven to 350°F.
  2. Mix dry flour, cocoa powder, baking soda, and salt together. Put to the side.
  3. In a separate bowl, mix sugar and coconut oil together. Gradually add dry ingredients, mixing well until a dough forms.
  4. Roll the dough out with a rolling pin and cut out circles using a cookie cutter. Place cookie rounds on a baking tray lined with parchment paper.
  5. Bake for about 12-15 minutes. Transfer to a wire rack to cool for at least an hour.
  6. While the cookies are cooling, beat together non-dairy butter, sugar, and vanilla seeds until a smooth filling forms. Scoop filling into a piping bag.
  7. Pipe filling onto the bottom side of a completely cooled cookie. Take a second cookie and carefully press it to yield a sandwich.

Ingredients

For the crust

  • 1 ¼ cup almond meal
  • 1 ½ cups dried shredded coconut
  • 3 tbsp cocoa powder
  • ½ cup coconut oil
  • 3 tbsp agave nectar
  • splash of almond milk
  • pinch of salt

For the filling

  • 1 ½ cups silken tofu, drained
  • ¾ cup dairy-free chocolate, melted
  • 1/3 cup honey or maple syrup
  • 3 tbsp orange zest
  • juice of one orange
  • Optional: raw cacao nibs

Directions

  1. Place ingredients for crust in a food processor and mix until combined. Turn it out and mold it into your tartlet pans, then place in the refrigerator to chill for about half an hour or until firm.
  2. Place ingredients for filling in a mixing bowl and blend with a hand mixer until smooth.
  3. Remove tartlet pans from the refrigerator. Carefully pour in filling into molds. Garnish with raw cacao nibs if desired and enjoy.

Homemade Berry Lemon Sorbet

Ingredients

  • 4 cups mixed berries (fresh or frozen)
  • 1 ½ tsp lemon zest
  • juice from ½ a lemon
  • 3 tbsp honey or agave nectar
  • ½ cup water

Directions

  1. Put all the ingredients into a blender. Blend until smooth.
  2. Pour the mixture into a container and place in the freezer for about two hours, or until it hardens to desired consistency.
