  • 1 cup Canned unsweetened full fat coconut milk
  • ⅔ cup Pineapple juice
  • 2 Eggs
  • 2 tbsp Avocado oil
  • ¼ cup Maple syrup
  • 1 ½ cups Cassava flour
  • 1 tbsp Baking powder
  • ½ tsp Kosher salt
  • ¼ cup Unsweetened shredded coconut (optional)
  • ⅓ cup Chopped pineapple (optional)

    In a large bowl, whisk together coconut milk, pineapple juice, eggs, avocado oil, and 2 tbsp maple syrup.

    Heat a pan or griddle over medium high heat. Grease if needed. Scoop pancake batter onto pan.
    Cook for 2-3 min on each side, or until golden brown.

This combo screams a tropical vacation that is only accentuated by additional chopped pineapple and shredded coconut served on top! We used cassava flour to keep these tropical pancakes safe for those following a paleo meal plan. Cassava flour yields an amazing texture that is actually scarily close to real white flour, although it has more fiber and nutritional value. Once the dry ingredients have been incorporated with our tropical wet mixture, simply scoop batter onto your pan or griddle, and flip accordingly.

These paleo fluffy tropical pancakes feature the perfect hint of sweetness while remaining gluten, dairy, and refined sugar-free.
