A Pancake Recipe That’ll Make You Feel Like You’re on Vacation
For years now, the paleolithic diet has proliferated in popularity. With a heightened focus on our health now more than ever, paleo enthusiasts have taken notice of the potential benefits that come with harnessing the dietary concepts paved for mankind millions of years ago. Following the paleo diet means omitting dairy, grains, and legumes from your diet. Over time through increased understanding of the diet, we’ve been able to greatly expand on recipes, incorporating more and more options to eat what we love without jeopardizing our health or dietary restrictions – and these paleo fluffy tropical pancakes are a perfect example!
If there’s one breakfast food that’s always more recognizable than the rest, it’s pancakes. This staple is oftentimes considered a weekend meal when you have more time to cook. However, this simple paleo pancake recipe only takes 10 minutes to prepare and requires less than 10 ingredients! These fluffy tropical pancakes incorporate the perfect amount of natural sweetness from pineapple juice and a little maple syrup, and are not lacking in fluffiness!
The first step to recreating these pancakes is combining pineapple juice and full-fat coconut milk. This combo screams a tropical vacation that is only accentuated by additional chopped pineapple and shredded coconut served on top! We used cassava flour to keep these tropical pancakes safe for those following a paleo meal plan. Cassava flour yields an amazing texture that is actually scarily close to real white flour, although it has more fiber and nutritional value. Once the dry ingredients have been incorporated with our tropical wet mixture, simply scoop batter onto your pan or griddle, and flip accordingly.
These paleo fluffy tropical pancakes feature the perfect hint of sweetness while remaining gluten, dairy, and refined sugar-free. With only about 377 calories per serving, they can also be paired with another protein if you’re looking for a more robust meal first thing in the morning. In a rush? Be sure to save your extra pancakes by storing them in the fridge! Simply plop in the toaster or microwave to heat them back up, and enjoy!
