- Large pan or griddle
- 1 cup Canned unsweetened full fat coconut milk
- ⅔ cup Pineapple juice
- 2 Eggs
- 2 tbsp Avocado oil
- ¼ cup Maple syrup
- 1 ½ cups Cassava flour
- 1 tbsp Baking powder
- ½ tsp Kosher salt
- ¼ cup Unsweetened shredded coconut (optional)
- ⅓ cup Chopped pineapple (optional)
1In a large bowl, whisk together coconut milk, pineapple juice, eggs, avocado oil, and 2 tbsp maple syrup.
2Add cassava flour, baking powder, and kosher salt and whisk to combine.
3Heat a pan or griddle over medium high heat. Grease if needed. Scoop pancake batter onto pan.·Cook for 2-3 min on each side, or until golden brown.
4Optional: top with shredded coconut, pineapple chunks, and drizzle with maple syrup.
