  • 1 tbsp Avocado oil
  • 1 cup Plant-based milk
  • 1 tsp Vanilla extract
  • 1 tbsp Egg replacer
  • 1 ½ cups Almond flour
  • 1 tsp Baking powder
  • ½ tsp Salt
  • 2 tbsp Monkfruit sugar
  • 1 tsp Matcha powder (optional, for color)
  • ⅓ cup Raspberries (optional)

Instructions

    Prepare avocado by slicing in half, removing pit, and scooping out the flesh.

    Add avocado, avocado oil, milk, vanilla, egg replacement, almond flour, baking powder, salt, monkfruit, and matcha powder (if using) to a blender. Blend until smooth.

    Heat a frying pan over medium high heat and grease with avocado oil spray. Scoop pancake batter onto pan and let cook for 2-3 minutes, or until golden brown.
