Welcome to the Beautiful Nostalgia That is Maple Pecan

Finding baked goods with great flavor and an even better texture can be somewhat difficult on the keto diet. But don’t sweat – we’ve created these filling Maple Pecan Muffins with only 3 grams net carbs per serving! Sweetened with monkfruit maple syrup, these muffins are perfect for breakfast, snack or dessert! Plus, each muffin only has 163 calories, paired with 13 grams of healthy fats and 6 grams of protein.

To make keto-friendly baked goods that taste great, we recommend using a combination of both almond and coconut flours. Almond flour will yield a great crumb, while coconut flour ensures moist baked goods. In addition to the flavor and texture they impart, both flours are low in carbs, and high in healthy fats. Coconut flour is also high in fiber and has been known to contribute towards consistent and effective digestion, and stable blood sugar levels.

To sweeten these muffins, we opt for monkfruit maple syrup to keep with the keto-friendly theme. If you didn’t know this product exists, you do now! It’s one of the best keto sweeteners for baked goods, besides powdered and granulated monkfruit. While this product has a thinner consistency than your average maple syrup, it’s the perfect substitute for when you’re craving the comforting flavor combination of maple and pecan.

Pecans are a great addition to baked goods because they smell and taste amazing when toasted! Plus, they’re full of a particular type of antioxidant called a flavonoid, that is great for both heart and brain health.

These maple pecan muffins are the perfect way to supplement our keto meal plan. Enjoy them along with our filling and fueling breakfasts, or in between meals to keep the hunger at bay. Feel free to store your muffins in the freezer and pop them in the microwave or oven to warm up!
