Ingredients

  • 1 cup White quinoa, dry
  • 2 cups Vegetable broth
  • 1 Red bell pepper
  • 1 Jalapeño
  • 1 tbsp + ¼ cup Olive oil
  • ½ cup Diced onion
  • 2 tsp Minced garlic
  • 1 tsp Ground cumin
  • ½ tsp Kosher salt
  • ½ tsp Black pepper
  • 15 oz Canned black beans, drained & rinsed
  • ¾ cup Frozen corn
  • 2 tbsp Lime juice
  • 2 tbsp Cilantro (optional)

Instructions

    Add quinoa and vegetable broth to a small saucepan. Bring to a boil. Once boiling, cover with lid and turn heat to low.

    Simmer for 15-20 minutes, or until all liquid is absorbed.

    Dice bell pepper and jalapeño.

    Heat 1 tbsp olive oil in a large pan. Add diced onion and sauté for 5-7 minutes, or until soft and translucent.

    Add bell pepper, minced garlic, salt, pepper, and cumin and sauté 3 minutes more.

    Add cooked quinoa, black beans, and corn and stir to combine.

    Add ¼ cup olive oil, and lime juice and salt to taste. Stir to combine. Serve!
