When feeding six, each serving has 216 calories, 3 grams net carbs, 10 grams fat, and 26 grams protein. To keep this a low carb soup recipe, we replace traditional rice with cauliflower rice, which combined with high quality olive oil makes a delicious and creamy meal that will keep you full.

This chicken soup recipe uses chicken breasts which are then shredded after simmering in delicious chicken broth. The added lean protein from the chicken also makes this keto recipe a good one to make after a particularly strenuous workout, when you might be needing an extra hit of protein. Many soup recipes feature vegetables with a higher carbohydrate count like carrot and potato, but since this is a keto soup recipe, we replace those veggies with lower carb options like celery, spinach, onion, and cauliflower rice.

If there’s one thing about soup, it’s that it tastes even better the next day. So, if you want to meal prep the additional servings for the week instead of sharing with a larger group of people, you do that keto meal prep! There’s nothing better than opening the fridge and having a healthy, keto meal prepared and ready to devour.
