Ingredients

  • 2 tbsp Olive oil
  • ½ cup Diced onion
  • 1 tbsp Minced garlic
  • ½ cup Diced celery
  • 1 lb Chicken breast
  • 2 cups Frozen cauliflower rice
  • 2 tbsp Lemon juice
  • 6 cups Chicken broth
  • ½ cup Coconut cream
  • 1 Bay leaf
  • 2 cups Spinach
  • 1 tsp Salt
  • 1 tsp Ground black pepper

Instructions

    Heat olive oil in a large soup pot. Sauté onion for 2-3 minutes, or until soft.

    Add celery and sauté 1-2 more minutes.

    Add garlic, salt, and pepper and sauté for 1-2 more minutes.

    Move the veggies to the outside of your pan. Add chicken breast and sear on both sides for 3-4 minutes each.

    Add chicken broth and your bay leaf. Bring mixture to a boil.

    Reduce heat to medium low and simmer for 20-30 minutes or until chicken is done.

    Remove chicken breast and shred completely with two forks. Add back to the pot with cauliflower rice, lemon juice, and coconut cream.

    Let simmer 5 more minutes or until cauliflower rice is hot. Season to taste and serve.
