- Large soup pot
- 2 tbsp Olive oil
- ½ cup Diced onion
- 1 tbsp Minced garlic
- ½ cup Diced celery
- 1 lb Chicken breast
- 2 cups Frozen cauliflower rice
- 2 tbsp Lemon juice
- 6 cups Chicken broth
- ½ cup Coconut cream
- 1 Bay leaf
- 2 cups Spinach
- 1 tsp Salt
- 1 tsp Ground black pepper
1Heat olive oil in a large soup pot. Sauté onion for 2-3 minutes, or until soft.·Add celery and sauté 1-2 more minutes.
2Add garlic, salt, and pepper and sauté for 1-2 more minutes.
3Move the veggies to the outside of your pan. Add chicken breast and sear on both sides for 3-4 minutes each.
4Add chicken broth and your bay leaf. Bring mixture to a boil.·Reduce heat to medium low and simmer for 20-30 minutes or until chicken is done.
5Remove chicken breast and shred completely with two forks. Add back to the pot with cauliflower rice, lemon juice, and coconut cream.·Let simmer 5 more minutes or until cauliflower rice is hot. Season to taste and serve.
