Granola That Tastes Like Carbs But Is Keto!

Granola is typically one of those foods you say goodbye to while on the ketogenic diet, but not anymore! While many traditional granolas contain loads of oats – which would break the keto carb bank in an instant – this keto granola recipe is chock full of nutritious nuts and seeds like almonds, pecans, pumpkin seeds, and chia seeds! This mixture is bolstered by unsweetened coconut flakes for a homemade granola that tastes amazing and will leave your kitchen smelling like heaven!

This keto granola recipe is a nutritional powerhouse loaded with healthy fats and high fiber per serving. Unsweetened coconut flakes are perfect for granola because they toast up nicely in the oven. Not to mention, coconut meat has been known to lower blood sugar – which is the opposite effect of your traditional grain-filled and sugar-laden granola. Almonds are a fantastic source of Vitamin E and magnesium, the latter especially helpful for brain function. Pumpkin and chia seeds provide lean protein and fiber, two things that are essential for surviving on the keto diet.

To make this keto granola recipe truly keto, we used a combination of monkfruit sugar and liquid stevia for a slightly sweet taste that isn’t too overpowering. Liquid stevia is combined with vanilla and avocado oil and poured over the nut and seed mixture to get it nice and crispy and evenly golden brown in the oven. Perhaps the cherry on top of this recipe is that this keto granola can be stored in the pantry for weeks in an airtight container! Dare we say it’s the perfect holiday gift for that keto person in your life?

We recommend serving this keto granola with unsweetened keto-friendly yogurt and a handful of mixed berries! Ideal for a snack to get you through the day, and pairs perfectly with our pre-made keto meal plan.
