  • Large soup pot


  • 1 bunch Green onions
  • 1 Green bell pepper
  • 2 Jalapeños
  • 2 tbsp Avocado oil
  • 3 tbsp Tomato paste
  • 1 tsp Kosher salt
  • 1 tsp Ground black pepper
  • ½ tsp Garlic powder
  • ½ tsp Onion powder
  • ½ tsp Smoked paprika
  • ½ tsp Ground cumin
  • ½ tsp Chili powder
  • ¼ tsp Red pepper flakes
  • 1 lb Ground beef
  • 4 oz Canned diced green chilis
  • 1 cup Chicken broth
  • 4 tbsp Sour cream (optional)
  • 4 tbsp Shredded cheese (optional)
  • 1 Jalapeño, sliced (optional)
  • 2 tbsp Green onion, chopped (optional)

    Chop green onion from the whites until the greens. Dice green bell pepper and jalapeños.

    In a large soup pot, heat avocado oil. Add chopped veggies and sauté 5-7 minutes, or until soft.

    Add salt, pepper, garlic powder, onion powder, smoked paprika, cumin, chili powder, red pepper flakes, and half of your tomato paste to the pan.
    Sauté for 1-2 more minutes, or until spices are fragrant.

    Add ground beef and cook for 5-7 minutes more, or until browned.

    Add remaining tomato paste, green chiles, and chicken broth to the pot. Bring to a boil, and then turn heat down to medium low. Cover and let simmer for 20-25 minutes.
    Add optional garnishes and serve.
