Almond Butter Cups Recipe

- 1Place chocolate in a microwave-safe bowl. Microwave in 30-second intervals until melted.·Then, add coconut oil and stevia and whisk together.
- 2Pour chocolate in a silicone mold so that the bottom is completely covered in chocolate.·Then, place in the freezer for 30 minutes to cool, or until solid.
- 3Add about ½ teaspoon almond butter to each cup. Place back in the freezer for about an hour, or until solid.·Then, cover almond butter with more melted chocolate up to the top of the mold. Place back in the freezer for 30 minutes to cool, or until solid. Store in the freezer.
The Perfect Vegan Keto Dessert
Dessert on the keto diet is always somewhat of a challenge. I remember when I was doing it, I’d make really sad concoctions with plain yogurt, almond butter, and basically 100% cacao. I highly do NOT recommend. You’re better off with these keto almond butter cups instead!
This vegan keto recipe is very simple and only requires four ingredients. I sweetened mine with stevia, but feel free to use your favorite keto sweetener. I used a silicone candy cup mold for this, but feel free to use any shape. If you’re a Reese’s lover, these almond butter cups are for you!
