Vegetarian/Vegan Keto Chili Version

What Can Replace Beans in Keto Chili?

Go for non-starchy vegetables to make your keto chili low carb.

Beans (though a great source of protein) are notoriously high in carbohydrates, which is not what we’re looking for in a keto chili recipe. Beans are a large part of what can make a great chili, but they aren’t the only option.

Non-starchy vegetables are a great way to bulk up your chili without adding more carbs, such as:

· Mushrooms
· Carrots
· Zucchini
· Tofu
· Tomato
· Peppers
· Olives
· Asparagus
· Green beans
· Jicama
· Okra
· Eggplant

You can also double up on your meat! Just avoid starchy vegetables like potatoes, corn, and squash as they tend to be higher in carbohydrates.

Importance of Seasoning

Spices are the heart of any good keto chili recipe! They can make or break your dish.

One of the complaints about keto meals is that they can be bland. To make your keto chili flavorful, add a variety of spices. If you’d prefer a hotter chili, consider adding jalapeños, habaneros, cayenne, paprika, and other hot veggies and spices.

You can shave off cooking time on your keto chili by using our bulk beef and turkey patties for an even easier chili making experience! They come pre-cooked, and pre-seasoned so they’re ready to add to your chili stock so you can skip the first step in the directions down below.

Ingredients

1 ½ lb ground beef or ground turkey
1 yellow onion, chopped
3 cloves garlic, minced
1 red bell pepper, thinly sliced
½ cup baby bella mushrooms
2 celery stalks, chopped
1 can (12-14.5 oz) diced tomatoes, with liquid
6 oz tomato paste
32 oz low-sodium beef broth
1 Tbsp dried oregano
2 Tbsp cumin
2 Tbsp Worcestershire sauce
1 Tbsp garlic powder
2 tsp salt
2 tsp black pepper
1-2 tsp smoked paprika
2 medium bay leaves, whole
1 Tbsp extra virgin olive oil

(Optional for garnish)

Sour cream
Sliced avocado
Shredded cheddar

Directions

  1. Heat olive oil in a large pan over medium-high heat and brown your ground turkey or ground beef. Drain extra grease.
  2. Add tomato paste, garlic powder, and paprika to cooked meat and mix. Set aside.
  3. In a Dutch oven or large pot, add broth, Worcestershire sauce, herbs, and the rest of your spices. Bring to a simmer over medium heat. Once mixture boils, add veggies and meat.
  4. Let simmer for about 15-20 minutes until broth has thickened and veggies are soft.
  5. Top keto chili with sour cream, avocado, and cheddar if preferred.

Vegetarian/Vegan Keto Chili Version

Tempeh is a firm protein alternative for your keto chili (and other) vegan friendly recipes.

Because this keto chili is full of vegetables, making a vegetarian or even vegan version is easy! Replacing ground turkey or beef with chunked, firm, grilled tofu, tempeh, or doubling up on veggies is a simple fix. And instead of beef broth, use low-sodium vegetable stock, or plain water!

For toppings, you can replace sour cream with coconut cream mixed with apple cider vinegar and vegan cheddar cheese.
