Ingredients

  • 12 oz Impossible Ground Beef
  • 1 cup Dry white rice
  • 4 Tomatoes
  • 2 ½ tbsp Olive oil
  • ⅓ cup Diced onion
  • 2 tbsp Fresh parsley
  • ½ tsp Garlic powder
  • ⅛ tsp Ground turmeric
  • ⅛ + ½ tsp Salt
  • ⅛ + ½ tsp Pepper
  • ⅛ tsp Sumac (optional)
  • ½ Cucumber (optional)

Instructions

    Preheat oven to 450°F. Place tomatoes in a baking dish and toss with ½ tbsp olive oil, ⅛ tsp salt, and ⅛ tsp pepper.

    Bake for about 15-20 minutes or until soft, flipping halfway through.

    Prepare rice to package instructions.

    In a medium bowl, combine onion, Impossible beef, ½ tsp salt, ½ tsp pepper, parsley, garlic powder, sumac, and turmeric.

    Form Impossible beef mixture into oval-shaped patties.

    Heat 2 tbsp olive oil in a nonstick pan. Make sure the bottom is completely coated with oil. When pan is hot, add Impossible beef patties. Cook for 3-4 minutes or until golden brown and flip. Cook for another 3-4 minutes or until done.

    Serve with rice, roasted tomatoes and optional cucumbers.

When the Vegan Meat Tastes Like the Real Deal

Middle Eastern food is hands down one of my favorites. I love how nuanced certain dishes can be depending on the geography of where someone is from within the region. I noticed this a lot with meat kebabs and began to order this dish at every Middle Eastern restaurant, from Lebanese to Persian. Like any food I enjoy at a restaurant, I always like to take some time to try and figure out how to recreate it in my own home. After a couple of times of making beef kebabs, I felt like I finally got the flavors down.

Because I want everyone to be able to indulge in my favorite dish, I took advantage of Impossible beef now being available in grocery stores, and adapted my beef kebab recipe to be totally vegan! This meat substitute is a lifesaver if you’re looking for a hearty alternative. The scientists at Impossible Foods have really made a product that is wonderfully close to real ground beef, opening up the idea of veganism to a wider group of people.

These Impossible beef kebabs are extremely flavorful and taste just like the real thing. I season them with diced onion and fresh parsley, along with fragrant spices like turmeric and sumac. I chose to serve the kebabs with some easy roasted tomatoes and white rice, two things I noticed came with many different renditions of kebabs I’ve encountered out at a restaurant.

If you’re looking for something “saucy” to add, this meal would probably taste amazing with a little dollop of hummus or tahini. I haven’t tried it personally, but can you ever go wrong by adding hummus to anything? Enjoy this filling plant-based meal that’ll keep you going at 22 grams of protein per serving – the perfect meal to make on a night where you have a little extra time, instead of popping a meal from our vegan meal delivery in the microwave.
