Mint Chocolate Truffles Recipe

  • 11 oz Dark chocolate (vegan & keto-friendly)
  • ½ cup Full fat coconut milk
  • ¾ tsp Peppermint extract
  • 1 tsp Vanilla extract
  • ¼ cup Cocoa powder

Instructions

    Finely chop chocolate and remove to a bowl.

    Microwave coconut cream for about 30 seconds, or until slightly simmering but not boiling.

    Add coconut cream to chocolate and cover with a towel for 5 minutes.

    After 5 minutes is up, mix together until smooth. Add vanilla extract and peppermint extract and mix again. If not all chocolate is melted, melt in microwave in 10 second increments.

    Chill in the fridge for about an hour, or until mixture has solidified and can be rolled.

    Scoop out chocolate ganache and roll into a ball.

    Roll truffles in cocoa powder and serve.

The Easiest Chocolate Truffle Recipe Ever

If you’ve ever bought those drool-worthy cocoa truffles from Trader Joe’s during the holiday season, you know how addicting they can be. The only problem is that if you can’t eat dairy like me, then you’re out of luck with most cocoa dusted, ganache-based truffles. That changes now with these babes!

Instead of using heavy cream like your typical chocolate ganache, I use coconut cream, which adds a subtle sweetness and creaminess to the truffle. I used super dark 85% cocoa, but feel free to use a higher or lower percentage of cocoa-based on your preference! These make an awesome holiday gift or dessert to hoard to yourself.
