Ingredients

  • 12 oz Impossible ground beef
  • ½ cup Vegan shredded cheese
  • 1 cup Vegan-friendly refried beans
  • 3 tbsp Taco seasoning of choice
  • 12 Taco-sized corn tortillas
  • 1 cup Diced onion
  • ½ cup Diced tomato
  • 2 tbsp Minced garlic
  • ¼ tsp Ground pepper
  • ¼ cup Cilantro leaves
  • 1 tbsp Olive oil
  • ¼ tsp Salt
  • ¼ cup Vegan sour cream (optional)

Instructions

    Heat olive oil in a medium pan. Add onion and sauté until soft, about 5 minutes.

    Add garlic and sauté for about 2 more minutes, or until soft.

    Add Impossible beef, salt, pepper, and spice mix to pan. Stir to combine and cook until done, about 6-8 minutes.

    Heat refried beans according to package instructions.

    Assemble tacos! Take a tortilla and spread with refried beans. Then add Impossible beef mixture, vegan sour cream, diced tomato, vegan shredded cheese, and cilantro leaves.
