We chose to use unsweetened chocolate rather than chocolate chips for this keto brownie recipe because chocolate chips can oftentimes have additives in them to keep their shape while baking. To make sure our brownies are considered a keto dessert and sugar free, we use monkfruit sugar as opposed to other keto-friendly alternatives like allulose or stevia.
Let’s talk about this nut butter swirl, because that’s debatably the best part of this brownie recipe! Our peanut butter filling is just peanut butter with cream cheese, egg, more monkfruit sugar, a hint of vanilla, and a bit of plant-based milk to thin out the mixture slightly. The vegan cream cheese adds a weight to the peanut butter filling so it stays on top of the brownie rather than sinking into the rough.
