  • 6 oz Unsweetened baking chocolate
  • ¾ cup Coconut oil, melted
  • 1 cup + 2 tbsp Monkfruit sugar
  • 4 Eggs, room temperature
  • 1 cup Almond flour
  • 2 tsp Vanilla extract
  • 1 tsp Baking powder
  • ¼ tsp Sea salt
  • ½ cup Peanut butter
  • 2 tbsp Vegan cream cheese
  • 2 tbsp Plant-based milk

Instructions

    Add about 1-2 inches of water to saucepan. Place a large glass bowl on top of saucepan. Add baking chocolate, coconut oil, and 1 cup monkfruit sugar to bowl. Bring water to a simmer and melt mixture until chocolate is fully melted, but be careful not to over heat. Remove from burner and let cool slightly.

    Preheat oven to 350℉ and line an 8x8 pan with parchment paper.

    In a small bowl, whisk together peanut butter, vegan cream cheese, 2 tbsp monkfruit sugar, 1 room temperature egg, plant-based milk, and 1 tsp vanilla until smooth.

    Whisk chocolate mixture. Add in 3 eggs one at a time, whisking until incorporated each time. Add 1 tsp vanilla and whisk again.

    The mixture should be smooth – if not, try beating with an electric mixer or immersion blender.

    Add almond flour, baking powder, and salt and whisk until smooth.

    Transfer brownie batter to pan. Spoon peanut butter mixture onto chocolate mixture. Using a knife, swirl peanut butter mixture into chocolate layer. You might have extra peanut butter mixture left over.

    Bake for 25-35 minutes, or until just set.
