  • 3/4 cup quinoa (rinsed if needed, check the package)
  • 11/2 cups water
  • 1/2 tsp salt
  • red bell pepper (chopped into small dice)
  • 1 can black beans (rinsed and drained)
  • 1/2 cup green onions (thinly sliced)
  • 1/2 cup chopped cilantro fresh
  • 2 tbsps lime juice (fresh-squeezed)
  • 1 tsp Spike Seasoning (optional but highly recommended)
  • 1 tsp ground cumin
  • 1/2 tsp ancho chili ground pepper (or use regular chile powder if you don’t have Ancho)
  • black ground pepper (fresh, to taste)
  • 1/4 cup extra-virgin olive oil

Vegan Tomato Salad with Cucumber, Avocado, Cilantro,



  • 6 tomatoes (medium, diced into bite-sized pieces, about 2 cups diced tomatoes)
  • 2 cucumber (medium, diced into bite-sized pieces, about 1 cup diced cucumber)
  • 1 avocado (diced into bite-sized pieces)
  • 1 cup chopped cilantro (use more or less to taste)
  • 1 tbsp lime juice (fresh squeezed)
  • 1 tbsp extra-virgin olive oil (best quality)
  • 1/4 tsp Spike Seasoning (optional, but good)
  • salt (to taste, I used Vege-Sal, but sea salt would be great here)

  • 141/2 ozs white beans (drained but not rinsed)
  • 2 tbsps purple onion (chopped)
  • lemon juice (A squeeze of)
  • 2 tsps wine vinegar (red or white)
  • 1 tbsp extra-virgin olive oil
  • 1/2 tsp herbes de provence (crumbled OR 1 teaspoon of some combination of finely chopped rosemary, tarragon, thyme, and lavender)
  • freshly ground pepper
  • salt
